Spaghetti carbonara
Spaghetti carbonara is a favourite for many and this recipe ensures that you are keeping the calories low (only 389 calories) while still enjoying a delicious meal.  

100 g spaghetti (uncooked weight)
60 g lean back bacon rashers, all visible fat removed
2 eggs, beaten

2 tbsp half-fat crème fraîche
2 tbsp grated Parmesan cheese

Ground black pepper
2 tbsp chopped parsley

Cook the pasta in a pan of lightly salted boiling water for about 10 minutes, until it is just tender (al dente). Drain well and return the spaghetti to the hot pan.

While the spaghetti is cooking, grill the bacon until crisp. Break roughly into pieces.

Add the bacon and beaten egg to the hot spaghetti and stir gently over a low heat until the egg starts to scramble and set. Stir in the crème fraîche and half the grated cheese. Grind in some black pepper.

Serve immediately, sprinkled with parsley and the remaining Parmesan, with a crisp salad.
