Chicken and kale stir-fry

Great healthy and quick mid-week supper
1tbsp sesame oil
2 chicken breasts, sliced into thin strips
1 onion, diced
1 garlic clove, crushed
1 red chilli, diced
3cm piece root ginger, peeled and diced
1 red pepper, sliced thinly
1 yellow pepper, sliced thinly
200g curly kale, washed, stalks removed and sliced
1 tbsp soy sauce
1 lime, juiced
Sesame oil, chicken strips fry until browned.
Add onion, ginger, chilli and garlic until softened.
Add peppers, kale, soy sauce and lime juice and continue cooking until just tender.
Serve with rice or noodles
