Chicken Breasts Stuffed with Dried Apricots and Goat Cheese

100g plain goat cheese
1 clove garlic, minced
125g dried apricots, chopped
125g shelled natural pistachios, chopped
75g bread crumbs
1 small bunch thyme, minced
4 large chicken breasts with skin, approximately 450g each
125ml olive oil
6g sea salt
Fresh cracked pepper
Preheat the oven to 170ºC / 375ºF / Gas Mark 5.
In a medium bowl stir together the goat cheese, garlic, apricots, pistachios, breadcrumbs and thyme.
Gently loosen the skin on the top of each chicken breast taking care to leave the edges intact.
Stuff the cheese mixture underneath the skin on each breast.
Place the chicken breasts on a baking sheet skin side up and drizzle olive oil over them.
Season the chicken breasts with salt and pepper.
Bake the stuffed chicken breasts for approximately 30 minutes, or until completely cooked through.
Serve.
