Chicken cacciatore

Chicken cacciatore
A great comfort dish to fill you.

2 tbsp olive oil

4 chicken fillets, roughly cut

1 onions, sliced

1 garlic clove, minced

5 beef tomatoes, roughly chopped

2 tbsp white wine vinegar

1 tbsp sugar

500ml chicken or vegetable stock

Sea salt and black pepper, to season

Handful fresh basil to serve

In a large saucepan, heat the olive oil over a medium heat. Gently cook the chicken until is it browned on both sides. About 10 minutes

Add the onion and garlic and cook for a further 5 minutes.

Add the tomatoes, vinegar, sugar and stock. Season with salt and pepper.

Reducing the temperature slightly, cover with a lid and leave to simmer for 45 minutes.

Make sure it is piping hot before serving in a bowl and garnishing with basil.
