Chicken Fajita Salad

A healthy and delicious family favourite!
2 Birds Eye Original Chicken Chargrills
150g mixed salad leaves
½ red onion
½ red pepper
½ yellow pepper
½ bag fajita mix
1 avocado, sliced
A bunch of coriander
For the dressing:
1 tbsp lime juice
2 tbsp olive oil
Salt and pepper
Cook the Birds Eye Original Chicken Chargrills according to package instructions.
In a large pan, heat some olive oil and add the onions, peppers and fajita mix. Cook for 5 minutes and set aside.
To make the dressing: combine all ingredients and mix well.
In a large serving bowl, place mixed salad leaves at the bottom.
Place the sauteed vegetables, avocado and cooked chicken on top.
Drizzle with dressing and scatter with fresh chopped coriander.
