Chicken satay
This flavoursome chicken dish is great for all the family

6 chicken breasts, cubed and threaded onto wooden skewers

Marinade

1 tbsp soy sauce

Juice of one lime

1 tbsp rapeseed oil

1 tsp red curry paste

Satay Sauce

1 tbsp peanut butter

1 tsp soy sauce

1 tsp red curry paste

1 can 400g coconut milk

fresh coriander

2 cm grated ginger

2 cloves garlic, crushed

Marinate the chicken skewers in the marinade for over an hour, overnight if possible. 

Grill the skewers until cooked through, about 20mins.

Place all of the sauce ingredients in a saucepan and reduce to create a tasty sauce. 

Serve the sauce with rice and place the skewers on top.
