Chicken with couscous and citrus salad
A light Mediterranean salad infused with citrus and rosemary.
 

200g Mixed leaf salad

2 Oranges

1 tbsp olive oil

200g Couscous

140g Cooked chicken pieces

50g rosemary, as garnish

Make the couscous as directed on the instructions.

Juice one orange and peel and segment the other.

Mix the orange juice with the olive oil and stir into the cooked couscous.

Add in the chicken pieces and the orange segments into the couscous.

Divide half the leaves between two plates and top with the chicken and couscous with a bit of rosemary if using.
