Chocolate and coconut trifle

Chocolate and coconut trifle
A delicious twist on the traditional Christmas trifle.

8 tbsp cocoa powder

3 egg yolks

2 tbsp cornflour

400ml milk, plus a little extra for soaking

397ml tin sweetened condensed milk

200ml coconut milk

300g desiccated coconut

1 packet sponge fingers

200ml cream

50g dark chocolate shavings

To a saucepan add milk, condensed milk, coconut milk, egg yolks and 2 tbsp cornflour.

Stir constantly over a low heat until it has thickened into a custard.

Divide the custard in half.

To one half, add the cocoa powder.

To the other half, add 200g desiccated coconut.

Soak the sponge fingers in a little milk, before adding a single layer to the trifle dish.

Top with a layer of coconut custard, follow with a layer of chocolate custard and repeat.

Whip the cream, then spread over the top of the trifle.

Scatter 100g desiccated coconut and the chocolate shavings on top.
