Chocolate and orange mousse

120 ml double cream
120 g dark chocolate broken into small pieces.
1 tsp. Goodall’s vanilla essence
1 tbsp. of Grand Marnier or grated orange zest for an alcohol free version
2 eggs
In a saucepan bring the cream to a boil, turn off the heat and add the chocolate and vanilla essence.
Keep stirring until the chocolate has melted into the cream. Add the Grand Marnier or orange zest
Separate the eggs and add the egg yolks to the mixture and whisk together thoroughly.
Whisk the egg whites until stiff and start by folding in a quarter of the whisked egg whites into the mixture using a metal spoon now gently fold in the remainder trying not to knock out any of the air.
Spoon the mousse mixture into little pots or cups and leave in the fridge to set for 1-2 hours.
