Chocolate orange cupcakes
Orange and chocolate is a winning combination and works really well in this recipe. These cupcakes are perfect for birthday parties.
For the cupcakes:
120g plain flour
140g caster sugar
1 tsp baking powder
40g unsalted butter
50g dark chocolate, melted
1 free-range egg
125ml milk
Juice of 1 orange
3 tbsp granulated sugar
For the buttercream:
125g unsalted butter, softened to room temperature
250g icing sugar
2-3 tbsp milk
50g melted white chocolate
Zest of 1 orange
100g orange flavoured chocolate
Preheat the oven to 170°C/325°F/Gas 3. Place paper cases in a 12-hole muffin tin. Combine flour, sugar and baking powder together in a food processor. Tip in the butter and continue to pulse until combined.
Whisk the melted chocolate, egg and milk together in a bowl.
Mix the chocolate mixture into the flour mixture.
Put the mixture into the cases and bake for 15-20 minutes until golden-brown. Leave to cool for 10 minutes.
Mix the orange juice and granulated sugar together in a bowl. Pour the orange juice mixture over the cupcakes while warm and leave to fully cool.
For the white chocolate and orange buttercream, Mix the butter in a bowl until light and fluffy. Gently stir in the icing sugar and continue to beat for 3-5 minutes. Mix in the milk, melted chocolate and orange zest.
Decorate the cupcakes with the buttercream
