Recipe:
125g plain flour
25g coca powder
11/2 teaspoon baking powder
150g caster sugar
50g butter at room temp
1 egg
100ml milk
For the Icing
30g butter at room temp
300g icing sugar
1/2 tsp vanilla essence
2 tbsp milk
Pinch of salt
Smarties for eyes
Heat oven 180°C/350°F/Gas 4.
Sift flour, coco powder and baking powder. Add sugar and butter mix together until thick and smooth, about 2/3 mins with mixer. Make sure it is mixed well.
Crack egg into cup and beat slightly, then add to mixture. Then add milk, and mix once more till mixture become smooth.
Spoon mixture into muffin cases in muffin tray.
Bake in oven for about 20-25 mins. You can check by touching. Muffins should be spongy to touch or you can test with a skewer in the middle of one of the cakes. If come out clean, cakes are ready.
Put the cooked cakes on a wire rack to cool.
Icing
In bowl mix butter with mixer till smooth.
Add the sugar, vanilla extract, and a small pinch of salt and mix again with mixer till mixture is all combined and smooth.
Then gradually add milk and beat for a few more minutes. Mixture should be light and fluffy in appearance.
Spoon mixture in piping bag with a small nossle.
Pipe bands along sides of the cakes. The lines do not need to be perfect - remember the mummy has been sleeping for thousands of years!
Add 2 Smarties for eyes in between lines.
