Chorizo, cherry tomato and onion salad

A fresh, spicy salad with crisp flavours and a hit of paprika.
2½ tbsp olive oil
200g chorizo sausage ring, cut into slices
2 tsp red wine vinegar
1 small red onion, finely chopped
50g feta cheese, crumbled
500g cherry tomatoes, halved
2 tbsp fresh parsley, roughly chopped
Heat a little of the olive oil in a non-stick pan and fry the chorizo until golden and it releases some of the paprika coloured oils.
In a large bowl combine the rest of the oil with the vinegar.
Add the onion, tomatoes, parsley, warm chorizo and the feta cheese.
Stir together well and season to taste with salt and pepper.
Serve with some crusty bread.
