Christmas gingerbread men

250g plain flour

75g butter, softened

75g brown sugar

1/2 teaspoon bicarbonate of soda

50g golden syrup

1 egg yolk

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

Cream the sugar and butter together until the mixture is light and fluffy

Add bicardonate of soda, egg yolk and golden syrup. Stir well until well combined.

Sift the flour and spices, and to mixture. Beat with a wooden spoon until mixture is crumbley. 

Empty mixture onto worktop and bring together into a ball. Flatten the dough and smooth with the palm of your hand.

Wrap dough in clingfilm and put into the fridge to chill for at least 30 minutes (leave for several hours or over night if you have time)

Preheat oven to 180°C/350°F/Gas 4 and brush a couple of non-stick baking trays with vegetable oil.

Roll dough out so that it is roughly 2mm thick. Use gingerbread cutters to cut out shapes.

Place gingerbread men on trays, with a little space inbetween each one.

Bake for 10-12 minutes until gingerbread men are golden in colour.

Remove from baking tray immediately and place on wire tray to cool.

Once cool, decorate using writing icing.
