Christmas morning sausage rolls

1 box of rolled puff pastry, 2 sheets in a box
400g sausage meat
6 dates, finely chopped

4 dried apricots, finely chopped
6 prunes, finely chopped
1 medium onion, finely chopped
1 egg, beaten

Preheat the oven to 220ºC (200ºC for fan assisted) / 425ºF / Gas Mark 7.

Unroll both pastry sheets and cut in half across their width to give 4 oblong pieces of pastry.

Mix the sausage meat, prunes, apricots and dates together and divide it into 4. 

Place one quarter of the sausage meat mixture, slightly off centre down the length of one of the pastry oblongs and in a ‘roll’ form.

Brush one border lightly with beaten egg and fold over the pastry to cover the sausagemeat and form a side seal along the edge of the roll.

Cut into pieces depending on what size of sausage roll you would like and brush each one with beaten egg. 

Place on to a greased baking sheet and bake for about 20 minutes.
