Chunky chocolate cookies
Simple to make and the kids will adore these chocolate chunky cookies.

225g plain flour

½ tsp baking soda

185g butter, melted

200g light soft brown sugar

50g white sugar

1 tsp vanilla extract

1 egg

270g broken up pieces of leftover Easter eggs

Preheat the oven to 180°C / 350°F / Gas mark 4

Line two baking trays with greaseproof paper.

Sift together the flour and baking soda. 

Stir them together and then add in the chocolate pieces/broken up eggs.  In another bowl mix together the melted butter with the sugars, vanilla and egg. 

Beat thoroughly to combine. 

Mix the wet ingredients with the sifted dry ingredients and the chocolate until completely combined. 

Drop large spoonfuls of the dough onto the lined baking trays and bake for 12 - 15 minutes. 

Cool on the baking trays for about 10 minutes and then transfer to a wire rack to cool completely before serving.
