Chocolate bark
This simple recipes is versatile and any leftover chocolates can be used to make this. Be as creative as you like.

400g mixed chocolate, dark, milk, white, eggs, whatever you have on hand

100g dried cranberries

100 pistachios (optional) crushed

1 red chilli (deseeded and finely chopped) optional

Line a baking tray with greaseproof paper.

Melt chocolate in a heat proof bowl over a pan of barely simmering water, do not allow the bowl to make contact with the water.

Stir throughout the melting process.

If the cranberries are large, chop them up a bit, if you are using the pistachios, place them in a sealed bag and bask them up a bit using a rolling pin, or a cup.

Layer the melted chocolate evenly over the prepared tray then top with the cranberries, nuts and chili if using.

Chill overnight.

Next day, take the paper off the tray, and roughly chop into bark shards.
