Cod with lemon and herb crust
This delicious fish dish couldn't be easier and it tastes great too!

50g butter

Handful of parsley and basil, finely chopped

1 lemon, zest only

100g pine nuts, toasted, finely chopped

100g fresh breadcrumbs

4 cod fillets, thick cut

Salt and freshly ground black pepper

1 lemon, juice only

Olive oil, for frying

Preheat the oven to 200°C/400°F/Gas 6

To make the crust, add the butter, herbs, lemon zest, pine nuts and breadcrumbs to a blender and blend to a paste.

Season the cod with salt and ground black pepper, cover with lemon juice and spread the crust paste on top of the fish.

Transfer to a baking tray and bake for 10 minutes until the crust is golden brown.

Serve with minted peas and baby potatoes.
