Chicken burger with spinach

Chicken burger with spinach

40g pine kernels

2 chicken breast fillets, skinned

2 boneless chicken thighs, skinned

40g fresh spinach, chopped

1/8-1/4 tsp dried red chilli flakes

flour for dusting

1 tbsp olive oil

Salt, freshly ground black pepper

Salad to serve

 Heat a frying pan over medium heat. Toast the pine nuts until they take a nice golden brown colour, while stirring non-stop. Allow them to cool down.

Cut the chicken breasts and thighs into pieces and chop them in a food processor. Once well minced, pour in the pine nuts, spinach, chilli flakes, salt and black pepper. Process until all the ingredients are finely chopped and well combined.

 Divide the mixture into 4 equal parts. Wet your hands and shape each part into a patty. Dust with flour, shaking off the excess.

Pour the oil into a frying pan and place over the heat. When the oil is hot, lay the patties into the pan and cook them on each side until they get a golden brown colour. Serve hot with a green salad
