Cornflake raisin cookies

Cornflake raisin cookies
A great way to get healthy grains into your children. 

23g rolled oats

32g crushed cornflakes

Pinch salt

1/2 tsp cinnamon powder

1/2 tsp baking powder

36g plain flour

45g raisins

60g butter, melted

1 tbsp greek yoghurt

1 tbsp honey

Preheat oven to 180°C or 160°C fan assisted. Line a tray with baking parchment.

Spread oats on the tray and place in the oven for 3 minutes, remove and leave to cool.

Put oats in a bowl and add crushed cornflakes, salt, cinnamon powder, baking powder, flour and raisinsand mix well.

Pour in the butter, yoghurt and honey, stir all the ingredients thoroughly.

Roll small balls from the mixture and place on the baking tray, flattening them with the back of a fork.

Put the biscuits into the oven for around 15-20 minutes or until they turn golden. 

Leave on the tray for around 5 minutes before turning out onto a wire rack to cool completely.
