Cranberry and orange relish

450g fresh cranberries
Juice of 1 large orange
Zest of 1 large orange (optional)
½ tsp Goodall’s ground ginger
75g caster sugar
½ tsp ground cinnamon
4 Goodall’s whole cloves
2-3 tbsp port
Tip them into a saucepan.
Add the juice and zest (if using) of the orange to the pan along with the ginger, spices and sugar.
Bring everything up to simmering point, stir and put a lid on the saucepan, leave it simmer very gently for about 5 minutes.
Take the pan off the heat, stir in the port and once cooled, remove the cloves and pour into a serving dish. Cover with clingfilm and keep chilled until needed.
