Cranberry and orange walnut bread
A fantastic combination that is ideal with tea and company.

250g plain flour

150g caster sugar

¾ tsp salt

1 ½ tsp baking powder

½ tsp bicarbonate of soda

100g chopped cranberries

50g chopped walnuts

1 egg

2 tbsp vegetable oil

180ml fresh orange juice

1 tbsp grated orange zest

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease a 23x12cm loaf tin.

Combine the flour, sugar, salt, baking powder and bicarbonate of soda in a large bowl.

Add the cranberries and walnuts, and stir to coat through the flour mixture.

In another bowl, mix together the egg, oil, orange juice and orange zest.

Pour the egg mixture into the flour mixture, and stir until just combined.

Spoon the cake mixture into the prepared loaf tin.

Bake for 50 minutes, or until a skewer inserted near the centre comes out clean.

Cool in the tin for 10 minutes, then remove to a wire rack to cool completely for serving.
