Creamy cauliflower bake

You can't beat a tasty cauliflower bake after a long day.
1 small cauliflower, sliced
2 tbsp olive oil
1½ tbsp butter
2 tbsp flour
250ml milk
250ml stock
1 tsp mustard
2 tbsp chopped chives
½ tsp lemon zest
60g low-fat cheddar cheese
Heat the oven to 200°C or gas mark 6.
Over a medium heat, melt the butter and add the flour.
Slowly add the milk and stock, make sure you stir constantly to avoid any lumps.
Next add the mustard and allow to simmer until sauce thickens. Stir in the chives and lemon zest.
Cook the cauliflower in a pot of water until tender before placing into the lasagne dish.
Top with the creamy sauce, sprinkle the cheese over it and place in the oven for 25 minutes.
