Crispy courgette slices

These courgette slices are very mild in flavour but you can add various spices if you fancy something with lots of flavour.
1 large courgette
1 tsp olive oil
½ tsp salt
Freshly ground black pepper
Preheat the oven to 220°C / 425°F / Gas Mark 7. Line a baking tray with parchment paper.
Cut the courgette into really thin slices.
Toss them together with the oil, salt and pepper.
Lay the courgette slices on the baking tray and pop in the oven for 20-25 minutes until crispy around the edges.
Serve alone or as a side dish.
