Crunchy mango cookies

This recipe is great fun to make with the kids.
140g butter, at room temperature
50g golden caster sugar
1 egg yolk
1 tsp vanilla extract
1 tbsp maple syrup
100g dried mango, finely chopped
175g plain flour, plus extra for dusting
Preheat the oven to 180°C / 350°F / Gas mark 4.
Grease and line a baking tray with greaseproof paper and set aside.
Place the butter and sugar in a bowl and whisk until smooth and creamy.
You can also use a food processor for this step.
Add the egg yolk, vanilla, maple syrup and mango.
Mix well to blend in.
Add the flour and briefly mix to form a soft dough.
Turn out onto a floured surface and shape into a ball. Chill for 20 minutes.
Using a rolling pin, roll the cookie dough to the thickness of 3.5mm on a lightly floured surface, then cut out biscuit shapes with a 10cm cutter for large, or a 5cm cutter for smaller cookies.
Transfer to the prepared tray and bake for 12-15 minutes or until lightly golden and firm.
Remove and leave to cool on a wire rack.
