Dairygold honey, lemon and rhubarb traybake

100g Dairygold baking block
100g caster sugar
2 free-range eggs
100g self-raising flour
150g rhubarb, peeled and chopped
1 large lemon, peeled and chopped
2 tbsp honey
Preheat the oven to 200C/400F/Gas 6.
Place the Dairygold baking block and sugar into a food processor and blend together to a paste.
Add the eggs and flour and blend again.
Grease a baking tray with Dairygold baking block and add the rhubarb and lemon pieces and drizzle with the honey.
Add the sponge mixture to the tray and place in the oven to bake for 10/15 minutes, or until the sponge is golden and set firm. Serve hot with whipped cream.
