Dark chocolate chunk oat cookie bars

Really tasty chocolate and oat squares which are dairy-free.
225g jumbo oats
140g plain flour
140g wholemeal flour
200g brown sugar
1 tsp bicarbonate soda
½ tsp salt
150ml coconut oil, melted
2 eggs
1 tbsp vanilla extract
225g dark chocolate, chopped into chunks
Preheat oven to 180°C/350°F/Gas 4.
Grease and line a 20cm square cake tin.
Add the oats, flour, brown sugar, bicarbonate soda, salt, melted coconut oil, eggs and vanilla and beat until combined.
Mix in 125g of the chopped dark chocolate.
Scoop half the batter into the prepared cake tin and smooth down into the pan.
Sprinkle a layer of chopped dark chocolate over this.
Spread the remaining dough over this, sprinkle some more chopped dark chocolate on top and bake for 20 minutes.
Allow bars to cool in the tin before slicing and serving.
