David Gillick's Brekkie: Poached eggs, bacon & avocado

1 Sandwich Thin
2 bacon rashers
1 soft, ripe avocado
Handful of fresh spinach
Poach 2 eggs in boiling water
Grill bacon until lightly crisped.
Mash avocado with a fork in a bowl, add a squeeze of lemon and a pinch of salt and pepper.
Mix ingredients together well.
Spread avocado on 1 slice of Sandwich Thin and then the remainder on the other
Add a few spinach leaves, place bacon on top followed by poached egg
Season with salt and pepper.
