Devils food cake
Cook:
40 mins
60g cocoa powder
265g boiling water
260g plain flour
340g caster sugar
5g bread soda
250g softened butter
150g or 3 eggs (beat lightly)
10g vanilla essence
Icing: Ganache
400g or 1pt fresh cream
300g plain choc
400g milk choc
30g butter
Pre-heat oven to 190⁰C - fan oven
Dissolve cocoa in boiling water and add ¼ to the eggs
Mix together flour, sugar and bread soda
Add the softened butter and rest of (3/4) cocoa mix
Scrape down bowl
Gradually stream in egg/cocoa mixture in 3/4 additions
Allow mixture to cool
Pour mix into prepared 10” square tin lined with parchment/baking paper. Bake for 40-45 minutes.
Icing and decorations:
Bring cream and butter to the boil
Remove from heat and add broken choc
Leave to cool
Spread over cold cake
Decorate as per photo using lots and lots of mini smarties for rocket and firework and hundreds and thousands for sparks...scrum-diddly-umpcious!
