Easiest Chicken Casserole
A delicious dinner that the whole family will enjoy.

2 tbsp olive oil

4 large chicken breasts, cut into strips

2 x 425ml tin Cream of Chicken soup

250 ml water

1 carrot, chopped

100g peas

2 stalks celery, chopped

1 leek, chopped

1 tbsp dried thyme

Salt and pepper

Preheat oven to 200°C or gas mark 6.

In a sauce pan, heat the olive oil and fry the chicken until it is slightly browned on the edges.

Add the soup, water, thyme and season well.

Stir in the chopped vegetables. Bring to the boil and pour into an oven proof dish.

Bake for 45-50 minutes.
