Easy key lime and chocolate pie
Prep:

300ml cream
4 limes (plus 1 for decoration)
1 x 397g tin of condensed milk
200g digestive biscuits
50g softened butter
1 tsp cocoa
Decorate:
1 lime,
Whipped cream,
Chocolate curls
To start make the base. Lightly grease a 23cm springform tin with butter.
Tip the biscuits and butter into a food processor and blitz until the mixture resembles breadcrumbs. Put in the fridge to cool until needed.
Grate the skin of the limes, cut in half and juice them.
Pop into a mixer bowl with the cream and condensed milk and whisk until the mixture is thick and creamy. It will set further in the fridge. Take care not to overbeat.
When it’s ready take the base from the fridge and pour the mixture on top and smooth it out, then placce in the fridge for at least an hour, preferably overnight.
When you are ready to serve, decorate with whipped cream and chocolate curls. Lastly, place a lime wedge in the middle.
