Easy lentil curry

Easy lentil curry
This vegetable and lentil curry is healthy and just the thing for chilly wintry nights. The good news is it's low in fat too with only 420 calories per serving.

2 tbsp sunflower oil

2 medium onions, cut into wedges

4 tbsp curry paste

850ml vegetable stock

450g Green Isle Frozen Vegetables

100g red lentils

200g basmati rice

Turmeric

Handful of raisins and roughly chopped parsley

Poppadoms and mango chutney, to serve

Heat the oil in a large pan. Tip in the onions and fry gently until softened for 5-6 mnutes.

Mix in the curry paste and cook for 1 minute. Gently pour in small amount of stock, stirring with a wooden spoon.

Gradually, pour in the remainder of the stock.

Stir in the Green Isle Frozen Vegetables, put the lid on and simmer for 5 minutes.

Add the lentils, simmer for 15-20 minutes until the vegetables and lentils are softened.

In the meantime, cook the rice according to the packet instructions, adding a pinch of turmeric to the cooking water. Drain well.

Season the curry if desired, add a handful of raisins and chopped parsley and serve with rice, poppadums and chutney.
