Edamame with rice

Edamame with rice
A delicious dish with tons of protein and light fresh flavours.
 

Coarse salt and ground pepper

160g long-grain brown rice

250g frozen or fresh shelled edamame beans (found in most large supermarkets or Asian supermarekts)

1 tbsp fresh lime juice

1 tbsp rice vinegar

1 ½ tsp toasted sesame oil

½ tsp sugar

3 spring onion, thinly sliced on the diagonal

In a medium saucepan, bring lightly salted water to a boil.

Add the rice and cook according to the instructions.

Drain and set aside.

Cook the edamame according to the instructions and they are tender.

Drain and set aside covered to keep warm. In a small bowl, stir together lime juice, vinegar, oil, and sugar until sugar is dissolved.

With a fork, stir lime juice mixture and springs onions into the rice; and season with salt and pepper.

Add the edamame and serve.
