Egg nog (no raw egg)

1140ml (2 pints) whole milk
6 eggs
50g caster sugar
1 vanilla pod, split
200ml brandy
Cocoa powder or grated nutmeg for dusting (optional)
Place the eggs, milk, sugar and vanilla pod in a medium pan and heat gently, without boiling, until the mixture thickens enough to coat the back of a spoon.
Allow the egg nog to cool.
Before serving, mix in the brandy giving it a good stir.
Pour into glasses, dust with cocoa or freshly grated nutmeg, if using, and serve.
