Fairy cakes

Fairy cakes
It couldn't be easier to make fairy cakes, simply double the quantities where required.

125g unsalted butter, softened to room temperature

125g caster sugar

2 large eggs

125g self raising flour

1/2 tsp vanilla extract

2-3 tbsps milk

For the icing:

600g icing sugar, sifted

6 tbsp water

food colouring

sprinkles for decorating

Preheat the oven to 180°C

Put all the ingredients, excluding the milk in the food processor and blend till smooth. Continue to mix while adding milk gradually until you have a smooth texture. Spoon the mixture into the muffin cases and transfer to the oven for 15-20 minutes. It's a good idea to check after 15 minutes as they do bake quite quickly. The fairy cakes should be firm to the touch and golden on top. 

For artisitc purposes, you will need a level top so cut any lumps or bumps off with a knife and leave to cool. 

Meanwhile, make the icing. Mix the icing sugar, water and a drop or two of food colouring together until smooth and then use a spoon to spread the icing on each cake. Leave to dry for a minute before adding decorations.

You can add lemon or orange juice to the icing sugar to flavour the icing. You could also decorate the fairy cakes with good quality melted chocolate.
