Feta, spinach dip
This is a delicious, low fat dip packed with protein and iron. Iron is a main fatigue busting mineral essential to a growing child's diet.
1 tbsp olive oil
4 spring onions, chopped
2 cloves garlic, minced
150g baby spinach leaves, washed
½ tsp salt
½ tsp lemon zest
2 tsp fresh lemon juice
150g low fat, Greek yogurt
½ packet feta cheese
2 tbsp fresh dill, chopped
Fresh ground black pepper to taste
½ carrot, chopped thinly lengthwise
1 celery stick, cut into thin lengthwise strips
1 small red or yellow pepper, thinly sliced
4-5 radishes cut in half
Heat oil in the frying pan over medium heat. Add spring onions and garlic and cook, stir for about 2 minutes.
Add the spinach and cook, stirring often until wilted.
Using a slotted spoon, scoop the spinach mix into a food processor; pulse until roughly puréed.
Add remaining ingredients except the pepper, pulse once just to combine, then season to taste with the pepper.
Serve in a bowl with the vegetable sticks (crudité) using any remaining dill for garnish if you wish.
