Fluffy American pancakes
This pancake Tuesday why not try these fluffy American pancakes for a change. They're delicious served with golden syrup or a blueberry compote. 

180ml milk

2 tablespoons vinegar

125g plain flour

2 tablespoons caster sugar

1 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

1/2 teaspoon salt

1 egg

30g butter, melted

Mix together the milk and vinegar in a bowl and set aside for about 5 minutes which will allow milk to sour.

Mix the flour, sugar, baking powder, bicarbonate soda and salt in another large bowl. Using a whisk mix the egg and butter into the soured milk. Pour the dry ingredients into the wet mixture and whisk until lump free.

Heat a large frying pan over medium heat, and brush with oil or butter. Ladle about 4 tablespoons of batter onto the pan, and cook until bubbles begin to appear on top. Flip, and cook until golden brown on the other side.
