Forest fruit traybake

250g unsalted butter

300g golden caster sugar

1 tsp vanilla extract

3 large eggs

200g self-raising flour

50g ground almonds

200g mixed fruits (raspberries, blackberries and blueberries)

Icing sugar, to decorate

Grease and line a traybake. Heat oven to 160°C/ gas 4. Melt the butter over a low heat in a saucepan. Cool for 3-5 minutes and add the sugar, vanilla and eggs then mix until smooth. Add in the flour, almonds and ¼ tsp of salt and stir well.

Add the mixture into the tray and scatter the mixed fruit over. Bake for 1hr, covering with tin foil after 40 minutes. Test with a skewer before removing and then allow to cool in the tin for 20 minutes then transfer to a cooling rack before dredging with icing sugar and cutting into squares.

We tried this as a gluten free recipe and it works really well, just substitute the flour with a gluten free alternative.
