This recipe works really well, the lemon bars turn out light and gooey with a very pleasing lemony tang! Make sure to chill the bars in the fridge before serving
210g caster sugar
3 eggs
100ml freshly squeezed lemon juice
3 tsp grated lemon zest
Base
300g plain flour
80g icing sugar, plus a little extra for dusting
A pinch of salt
240g unsalted butter
2 tsp grated lemon zest
A large baking tray, lined with greaseproof paper
Preheat the oven to 170°C/ 325°F
Combine the flour, sugar, salt, butter and lemon zest using a freestanding electric mixer with a paddle attachment and continue to beat until the mixture has a breadcrumb like texture.
Press the dough together using your hands, and then push it evenly into the base of the baking tray.
Place in the oven to bake for about twenty minutes until light golden in colour. Leave to cool while you make the toping.
Place the sugar, eggs and the lemon juice and zest in a bowl and use a balloon whisk to mix together the ingredients.
Pour carefully over the base and return to the oven to bake for about 20 minutes. The topping should have set when you take it out.
Leave to completely cool and then place in the fridge overnight. Dust with icing sugar, cut into slices and serve.
