Friday night fish pie

This is an ideal treat for Friday evening-the recipe is easily doubled.
250g bag washed leaf spinach
450g potatoes
2 eggs
300g skinless, boneless fish fillets, cut into large chunks
100g half-fat crème fraîche
Juice 1/2 lemon
1 tbsp olive oil
Salt & pepper
Preheat the oven 200°C/400°F/gas 6.
Tip the potatoes into a saucepan and add water to cover potatoes, bring to the boil and and cook for 10-12 minutes until tender, drain and mash roughly.
In a colander, add the spinach and pour a little boiled in the kettle over the spinach to wilt it.
Set the spinach aside to cool,draining any excess water.
Scatter the spinach over the bottom of a pie dish.
Whisk the eggs and pour into the cracks between the spinach, then season with salt and pepper.
Add the fish over the spinach and eggs. Pour the créme fraiche over fish and drizzle with the lemon juice. Season well with salt and pepper.
Spoon the potato mixture on top, drizzle with olive oil, then place in the oven to bake for 20-25 mins until the potato topping is golden and slightly crisp.
