Fruit and vegetable rice salad

This colourful salad is an excellent way of getting lots of healthy ingredients into your children's diet.
100g basmati rice, long grain rice or brown rice
Handful prunes, halved
½ cucumber, deseeded and finely chopped
1 carrot, grated
6 dried apricots, chopped
2 tbsp olive oil
Squeeze of lemon juice
Cook the rice per the instructions.
Drain, rinse and drain again.
Mix with the prunes, cucumber, carrot, apricots then drizzle over olive oil and the lemon juice.
Season with salt and a little pepper.
