Quick tomato risotto

133g uncooked risotto rice
1 onion, finely chopped
1tbsp low-fat spread
250ml vegetable stock
500ml carton passata
500g punnet cherry tomatoes
90g ball low-fat mozzarella, drained and cut into large chunks
Handful fresh basil leaves, torn
Put the rice, onion and half the low-fat spread into a large microwaveable dish. Cover, then cook in the microwave on high for 3 minutes.
Stir in the stock and passata, then continue to cook uncovered for 10 minutes.
Give it a good stir, then mix in the tomatoes and mozzarella. Microwave on high for a further 8 minutes until the rice is cooked and the tomatoes have softened.
Leave the risotto to relax for a few minutes, then sprinkle with the basil and serve.
