Garden salad
 A quick and easy salad with a sharp lemon juice dressing has elements which break down fats and combat sluggish digestion.
 

1 cucumber

2 small cos lettuces

8 radishes, halved

A few small mint leaves

2 tbsp olive oil

Lemon juice

Sea salt and freshly ground black pepper

Cut the cucumber into chunks then quarter each lettuce and arrange on a platter with the cucumber radish and torn mint leaves.

Drizzle with 2 tablespoons of olive oil and some lemon juice.

Sprinkle with salt and pepper and serve.
