German honey cookies

These German-style honey cookies have an added twist with the pecan nuts.
100g butter, room temperature
80g sugar
5 tsp honey
2 eggs
1 tsp vanilla extract
1 tsp baking soda
250g all-purpose flour
Handful pecan nuts, minced
Preheat the oven to 180°C/ 350°F/ gas 4. Line a baking tray with parchment paper.
Melt the butter in a saucepan over a low to medium heat. Add the sugar and honey until the sugar has dissolved. Pour into a large bowl and allow to cool.
In a small bowl, beat the eggs together. Add the vanilla extract. Pour into the cooled honey mix.
Mix well before slowly adding the flour and baking soda. Sprinkle in the peacan nuts.
Spoon 1 tbsp of the mixture onto the baking tray until all the mixture has been used up. space them out as they will spread in the oven.
Place in the oven for 15 minutes until golden.
