200g caster sugar
200g butter
1 large egg
400g plain flour
2 tsp vanilla extract
300g icing sugar
Writing tubes of icing
Smarties
Preheat the oven to 170 and lightly grease two baking trays.
In a large mixing bowl, cream the butter and sugar together.
Add in the egg and vanilla extract and mix well.
Finally add the flour and mix.
Turn out onto a floured surface and bring together gently.
Use a ghost cutter to cut the cookie and place on the prepared baking tray.
If you have time, put them in the fridge for 20 minutes.
Bake in the preheated oven for 15 minutes until golden brown.
Remove from the oven and allow to cool on the baking tray.
Mix the icing sugar with a little warm water to make the icing – I usually add 2-3 tablespoons and add more if required. I like my icing to be a thick paste.
Spread on the cooled cookies and decorate with tubes of icing and Smarties!
