Gnocchi with a tomato sauce
This is a really tasty dish and is perfect for a lazy Saturday lunch.

6 large potatoes, roughly chopped

2 tbsp olive oil

270g plain flour

3 eggs

1 onion, finely chopped

3 tbsp basil leaves

1 clove garlic, crushed

600g tomato passata

Salt and freshly ground black pepper

Cook the potatoes in a large pan of boiling water.

Once cooked, mash together with the eggs and flour until it forms into a dough like substance.

Turn onto work surface, knead until smooth and divide into eight chunks. Roll into a sausage shape and cut into 2cm in length.

Heat the oil in a frying pan over a medium heat and cook the onion until soft.

Add the garlic and passata and allow to simmer for 10 minutes.

Bring a large pot of water to the boil, add a tablespoon of olive oil and cook the gnocchi in it.

Once the gnocchi have floated to the top the top, cook for a further minute, drain and return to pot.
