Goat’s cheese and vegetable snacks
 
Delightful and exotic ingredients that don’t break the bank but make for an impressive canapé or snack when having people over.
 

1 ltr vegetable oil, for deep-frying

250g ready-rolled puff pastry

Plain flour, for dusting

1 tbsp chives, finely chopped

2 cooked beetroots, finely grated

125g goat’s cheese, crumbled

1 large carrot, peeled and finely diced

Any green herb, preferred as decoration (optional)

Heat the vegetable oil in a large, heavy-based saucepan to 180°C.

Roll the pastry out on a lightly floured surface to a thickness of ½ cm.

Cut into 7-8cm rounds.

Mix together the chives, beetroot, goat’s cheese and carrot in a bowl and season with pepper.

Spoon a little of the mixture into the pastry and fold the pastry over the filling so that you have an enclosed pastry, using a little water to help seal the edge.

Use a fork to create a shallow pattern at the rim if you like or simply crimp together with your fingers.

Deep-fry in batches until golden brown in colour, about 4-5 minutes.

Transferring to kitchen paper as you go.

Serve with a flourish of fresh herbs if you like
