Half moon biscuits
With a combination of vanilla and almond flavours these half moon biscuits are a real treat.
 

170g butter, softened

100g caster sugar

2 eggs yolks

200g plain flour

1 tsp vanilla extract

1 tsp almond extract

150g icing sugar

Preheat the oven to 180°C / 350°F / Gas Mark 4. Line a baking tray with parchment paper.

Combine the butter with the sugar until creamy.

Beat the egg yolks together in a small jug and pour over the butter mixture.

Add the flour in slowly, folding it in gradually.

Spoon in the vanilla and almond extract and mix together. You will end up with a doughy texture.

To make the half moons, cut the dough into sections and roll into sausage shapes. Shape them into half moons and place on the baking tray.

Place in the oven for 15 minutes until golden.

When ready remove from oven and allow to cool.

Decorate with the icing sugar before serving.
