Healthy and delicious TWO-INGREDIENT pancakes
When we think of pancakes, we think of a pretty calorific treat right? So when we came across a carb-free, gluten-free, protein-packed two-ingredient pancake recipe we squealed. Loudly.
Pancake lovers, this is NOT a drill.
And all you need to make thee sweet and delicious discs of delight (yeah we like alliteration okay) are bananas and eggs – amazing right?
2 eggs
I large mashed banana
Oil for the pan (we use coconut)
Beat eggs and mix into mashed banana
If you like, add some flavouring, like cinnamon or some vanilla extract
Heat oil on the pan
Add half the mixture to the middle of the pan
When it starts to bubble, flip!

There you have it, the easiest, healthiest pancakes ever! Get creative and jazz them up with the likes of walnuts, mascarpone and maple syrup, or yoghurt and fresh berries.
