Two Ingredient energy bars

You can’t go wrong with these two ingredient energy bars. No cooking, no baking and perfect for the lunchbox.
450g pitted dates
270g rolled oats + extra for coating
Line a 17x27cm baking tin with greaseproof paper and set aside.
Place the dates into a food processor and blitz until it has a jam-like consistency.
You can add one tablespoon or two of hot water to achieve this if the dates are very dry.
Add all of the oats in slowly using a coffee mug, stirring each time you add more and the mix starts to pull away from the sides of the bowl.
Press the mixture into the baking tin.
Sprinkle the top with extra oats and freeze for 1-2 hours.
Cut into fingers and wrap in baking paper and store in an airtight container.
