Healthy orange and cinnamon cake

50g self-raising flour

4 eggs (2 whole, 2 separated)

10g + 3 tbsp sweetener

20g hazelnuts, chopped

1 tsp cinnamon

2 tsp baking powder

1 orange, zest and juice

Strawberries, to decorate

Heat the oven to 160°C. 

Combine the flour, baking powder, sweetener, cinnamon, hazelnuts, orange zest and half the orange juice in a mixing bowl. Add two whole eggs and two egg yolks.

Whisk the two egg whites until the form stiff peaks and fold gently into the mixture.

Pour into a lined square baking tin and bake for 30 minutes. 

Meanwhile, add the remaining juice to a small saucepan, 3 tbsp sweetener, 30ml of water and heat gently until sweetener is dissolved. 

When the cake is baked, remove from tin and place on a wire rack. While still warm, prick a few holes then pour the syrup evenly all over the cake. Let cool completely.

Cut into 16 pieces and decorate with slices of strawberries.
